Cucumber Raita/Kheera Raita

Ratia is an important food item. It not only makes the simple white curd delicious, but also helps in digestion. Cucumber Raita is one of the most commonly made side to go with a biryani or pulao. Cucumber benefits are a lot e.g – help in weight loss, flushes out toxins, fights heat both inside and outside, keeps you hydrated, relieves in eyes pain and cuts the cancer risk. 


Ingredients:-

Cucumber – 2
Whisked cold curd – 3 cups
Roasted Cumin powder – ½ tsp
Black salt
Black pepper
Red chili powder – 1pinch for sprinkle


Method:-
Take Cucumber 
Wash properly and peel
Grate Cucumber, and mix with whisked cold curd
Add Black salt, black pepper
Add roasted cumin powder and sprinkle the red chili
And Serve with any Indian food.

Lauki ka raita is a wonderful nutritious side dish. It is a refreshing yogurt based dish. Lauki is also known as bottle gourd, doodhi, ghia. Lauki raita is healthy and tastes delicious. Lauki has a blend taste and some people especially children do not like to eat it as a vegetable but I am sure they will definitely like lauki ka raita. Lauki is mild and neutral in taste combined with yogurt it makes a delicious side dish for spicy main course dishes served as part of traditional meal. Serve this  with any Indian flat bread , over the rice or with spicy food.

Ingredients

Lauki (Bottle gourd) - 250 grms
Yogur 3 cups
Black pepper- 1/2 tsp 
Black slat - as per taste
Rea chili for garnish 
Roasted cumin powder 1 tsp


How to make Lauki Ka Raita 

  1. Peel and grate lauki. Boil grated lauki with a little salt for five minutes.
  2. Drain out water and let the lauki cool. Whisk chilled yogurt and mix salt, black pepper. 
  3. Add boiled lauki and mix well. Dry roast cumin and make a coarse powder.
  4. Garnish lauki raita sprinkled with cumin powder and red chili powder. 
  5. Served with any Indian food.

Sieve this 


Whisk the curd


Add lauki the the curd


Add salt, pepper and garnish with some red chili and cumin powder and serve



Bhindi Ka Raita

Many people are afraid of using ladyfinger in raita as they think it will get gooey, But, you just need to know the right way of including it. The crispiness of fried ladyfinger mixed with yogurt and masalas taste oh so good and tongue-tickling results.

But one thing keep in mind , Serve this bindi raita immediately on preparation to enjoy the crispness of the deep-fried bhindi.
Serve with Pulaos, Biryanis and Roti.

Ingredients


250 gms ladyfinger (bhindi)
2 cups Whisked Curd
½ tsp roasted cumin powder
1 tsp black salt
½  tsp black pepper
Oil for deep frying 
½ tsp Red chili poweder
For garnishing – chopped green coriander


Method :-
1. Cut ladyfingers into thin round slices
2. Heat the oil in a kadai or pan and  deep-fry the ladyfinger, till then turn crisp     and golden brown in colour, drain oil and keep aside.
3. Just before serving ,add  the deep fried ladies finger mix in whisked curd and     add all spices black pepper, black salt, and roasted cumin powder.
4. Server immediately garnished with coriander

Cut into small pieces 


Heal oil


Add ladyfinger pieces and  deep fry



Drain out the oil and keep aside



Take whisked curd in bowl 


Add fried ladyfinger and masalas 



Now serve immediately
