Papad Spring Roll






A crispy and unique papad roll, fried and delicious appetizer, is simply irresistible. It is very crunchy and masaledar starter to be served with green chutney or tomato sauce. The papad are rolled with a boiled potato mix with spices and then microwave or deep fry after sealing the sides of the papad. Some people deep fry the papad, but we're gonna bake it in oven or microwave, this is a healthier version. You can use any type of papad (like urad dal papad, moong dal papad, kalimirch papad etc). You can change the filling as per your choice. You can try any variations with potato stuffing, paneer stuffing, cheese and veggie stuffing or any other that you like. I like to serve them hot as they will turn soggy after sometime. Next time if you want to try something new for any party or kid’s birthday party at your home, try these papad rolls. Papad Spring Roll

Ingredients
  • 10 Masala Papad
  • 8-10 Boiled Potato
  • 1/2 cup Corn
  • 1/2 tsp Red chili powder
  • 1/2 tsp Corainder powder
  • 1 tsp Amchur powder/Dry Mango
  • 1/2 tsp Cumin powder
  • 1 tsp Ginger Garlic powder
  • 1 tsp All-purpose flour
Instructions
Grate/mash the boil potato. Add Corn and all spices. Add Cheese and mix them well. Take all-purpose flour and add little water to make a thick paste and keep it aside. Now take warm water in a plate and soak one papad at a time for 30-40 seconds.Now take it out from water and lay it on the clean surface or chopping board and wipe with tissue paper the extra moisture. Take some filling and place it on one side of the papad leaving the edges. carefully roll them from one side to another just like you would roll a spring roll. At the end apply all-purpose flour paste and stick papad. Now with gentle hand press the papad so that everything sticks together. Make all the rolls and keep them aside. Now put them in a fryer or microwave for 2-3 min. Now take it out the crispy papad spring roll. Serve immediately hot papad roll with spicy green and red chutney.

Step by Step recipe:-

 Take boil potato.


Mash it properly. 


Add corn and spices.


Add cheese for extra flavour (optional).


Mix them properly. 


Take masala papad 


Take warm water in a plate and soak one papad at a time for 30-40 seconds.


Now take it out from water


 Wipe extra moisture with tissue paper 


Take some filling and place it on one side of the papad leaving the edges. With very carefully roll them from one side to another just like you would roll a spring roll. 





At the end apply all-purpose flour paste and stick papad. 



Make all the rolls and keep them aside


Put them in a fryer or microwave for 2-3 min


Take it out the crispy papad spring roll.



 Serve immediately hot papad roll with spicy green and red chutney.



Cucumber Tomato Sandwich



This is a very easy 10 min recipe. When you are busy at morning, this is the best option, these sandwiches make a good and light breakfast and it will take only 10-15 min. We need cucumber, tomato, butter, ketchup and brown bread. (You can use any type of bread, now a days different type of breads are available in the market. Choose anyone as per your taste). You can eat it at breakfast as well as at evening tea. These sandwiches can also be made for school tiffin’s whenever you are not in mood of cooking, and these sandwiches are nutritious and light to eat and you won't be feeling hungry. When we plan to go for a picnic or any trip and want to make something for travelling, first thing that comes to our mind are sandwiches coz it is quick and easy to prepare on the spots, but after 2-3 hrs these sandwiches will becomes soggy, the crunchy taste will not come up.
We can pack all these things (cucumber, tomato, butter, ketchup and spices) in different container so that we can make it on the spot and enjoy the fresh and crunchy sandwiches.

Cucumber Tomato Sandwich

Ingredients
  • 12 Pieces Brown Bread
  • 8-10 tsp Butter
  • 1 Cucumber
  • 2 Tomato
  • as per taste Black pepper
  • as pet taste Black salt
Preparation method
First we take brown bread and cut the corner very thin.
Apply 1 tsp butter on slice. 
Place the cucumber slices and tomato slices 
Sprinkle the black salt and black pepper over it. 
Take another bread and apply ketchup. Now cover it with ketchup slice. 
And cut it diagonally and serve immediately with hot tea or coffee.

Note:-
You can make it with different variations - (add and subtract ingredients according to your taste.)
= If you like mayonnaise, use it instead of butter.
= use white or any type of bread instead of brown bread.
= use cheese spread instead of butter
= you can also grill the sandwiches
= you can use green chutney also.
= add onion for more crunchy taste. 


Step by step recipe

Take Cucumber and Tomato


Cut in to slices and arrange all ingredients


Take brown bread and cut the corners and spread the butter all over it.


Place the cucumber slices and tomato slices 


Sprinkle the black salt and black pepper over it


Take another bread piece and spread the ketchup.


cover the sandwich and cut it diagonally and serve immediately with hot tea or coffee




Fruit Custard


Fruit Custard


Custard is a very yummy and tasty recipe with amazing flavors of fruits with milk, You can use different types of flavors of custard, i used vanilla custard powder, you can take variation of fruits. But I strongly recommend to use banana and mango, it com es out to be very tasty and delicious custard. Taste can be different, it depends upon the fruit you choose. I have used the fruits which I found easily in the market.  Fruit custard is one of the old dessert that all age group people love. Plain custard is also very tasty and delicious, but fresh fruit and dry fruits makes it more tasty and delicious. Chilled custard to be served with fruit and dry fruits.

 Ingredients:-
Sugar -100 gms
Milk – 500 gms
Custard powder 3 tsp
Mixed fruit
Ripe mangoes- 1
Banana -1
Mixed dry fruits
Fresh pomegranate pearls
Grapes
Red and green cherries

Method:-
  1. Finely chop banana, Mangoes, peel the pomegranate.
  2. Take grapes and wash them properly.
  3. Mix the custard powder with ¼ cup of milk and whisk it until it becomes smooth
  4. Heat milk in a pan.
  5. Pour the custard mixture in it.
  6. Add Sugar and stir once a while, till it thickens, it will take about 5-7 mins.
  7. Remove, transfer it to a bowl, cool completely and refrigerate.
  8. Add Chopped banana, mangoes, grapes and pomegranate, (you can add apples or different fruit as per your taste).

Step by Step:-

Milk 

Custard Powder


Mixed chopped fruits


Dry fruits


Mix the custard powder with ¼ cup of milk and whisk until smooth



Mix in hot milk 


Add sugar 




stir once a while, till it thickens, it will take about 5-7 mins.




 cool completely and refrigerate



Add mangoes 



Add banana


Add grapes and pomegranate 


Garnish with some dry fruits and serve chilled


Notes:-
Add and subtract fruits according to your preference.
If you prefer to make the custard sauce thicker,add more custard powder, but I like watery custard.



Jeera Rice - Restaurant Style Jeera Rice


Jeera Rice


Jeera Rice is a popular dish in North India in Punjabi cuisine, it is steam rice with flavored of cumin and fresh coriander and mint leaves. It is easy to prepare everyday rice dish, some people like jeera rice instead of steamed rice. I remembered that when I came in my in-laws house, I liked steamed rice with Punjabi Pokara Kadi, Dal, Rajma etc… but my in-laws liked only jeera rice. Then I thought I will make it with a different style steamed rice with Jeera.

Ingredients:-
1 glass rice
2 tsp cumin seeds
Chopped coriander leaves
Chopped mint leaves
Salt as per taste

Metehod:-

  1. Wash rice properly and soak it in water for ½ an hour.
  2. Take a pan and add water and when it comes to boil add soak rice for 3-4 min, and drain the water.
  3. Stir with some spatula that not stick with other.
  4. Now take another pan and heat the oil, add cumin seeds, when they crackle add some coriander and mint leaves, Add salt to taste.
  5. Add boiled rice and mix them well and cook for 2-3 min.
  6. Serve hot with any curry or curd. 

Step by Step:-

Take 1 glass Basmati Rice


Wash them properly and soak in water and keep aside for 1 hr. 


Boil water in pan 


Add soaked rice in hot water


When it starts boiling,remove it from fire


Sieve the rice 


Heat oil in pan and add cumin powder and crackle them 


Add Chopped fresh coriandar leaves and mint leaves 


Add boiled rice 


Add salt as per taste and mix them well


Cook for 1-2 min


Jeera rice is ready to served. 



Serve it with any indian dish
