 Hara Bhara Paneer Tikka



Paneer Tikka is an Indian tandoori dish which can be easily made at home. It is made from Chunks of Paneer marinated in spices and grilled in tandoor. It is purely a vegetarian dish. It is one of the best paneer recipes that can be served as starter or as an accompaniment. This is Paneer tikka and not paneer tikka masala. Paneer tikka is dry whereas paneer tikka masala is a gravy based dish. It very expensive dish. When I make at home so it's cheap and you can enjoy more. Paneer is good for bone health and good for diabetes people, It is rich in protein, magnesium, potassium. It helps in weight loss also.
Don’t worry, if you do not have a tandoor or grill; simply cook the tikkas on a greased Pan/Tava

Ingredients:-
Marinade Ingredients:-
Garlic and Ginger Paste
Green Chili
Turmeric
Salt
Red chili powder
Besan
Yogurt
Cumin seeds powder
Garam masala
Black pepper
AJwain
Fennel powder

Other ingredients:-
Capsicum – 2 capsicum
Onion – 3 onion
Paneer – ½ kg

Method:-

  1. Cut the paneer, capsicum and onion in cubes and keep aside.
  2. Take a bowl and mix all marinate ingredient and make a paste.
  3. Combine the paneer, capsicum and onion in marinade paste, toss gently and keep aside to marinate for at least minimum ½ hrs.
  4. Take a stick, arrange 1 piece of onion, 1 piece of capsicum and one piece of paneer and again 1 piece of capsicum and onion and again repeat the process for one more  times.
  5. Heat a nonstick pan/tava and cook the sticks on a medium flame using some oil till the paneer/capsicum/onion is light brown in colour from all sides. Serve immediately.

Step by Step recipe:-

Take Masale for marinate



Chopped onion and capsicum 


Cut paneer in cubes


Take curd


Take gram flour (besan)


Add maslae in in besan


Add curd in dry ingredients


mix them well


Add some mint and coriandar paste


Add chopped onion and capsicum


Add paneer pieces 


mix them very gently 


Cover with cling wrap and keep it for 1 hr. 


Take a stick, arrange like this 



take a pan and put some oil for shallow frying


place the stick in pan 


turn the stick when it becomes brown from on side. 


serve it with chutney and some onion strips


you can put in fryer without oil



Serve it with chutney and chutney.



Note:-


If you don’t have a stick spread on tava/pan individually. Alternatively, Grill the marinate paneer, capsicum and onion on a tandoor, barbeque, oven and fryer till light brown.

Mango Mastani is easy and tasty drink. Mango Shake is very popular in summer in north India. It is perfect summer cooler. No need for too much ingredients. But i gave a different twist with ice cream, its taste is awesomeand is a mouthwatering drink, no one can resist it. When summer starts, my kids start demanding more of it.
Mango is known as the "King of fruits" and summer is incomplete without it. You can use any type of Mango.

Ingredients-
2 mangoes
Sugar- 2-3 tsp
Milk- ½ cup
Vanilla ice cream- 2 scoop
Dry fruits for garnish
Green and red cherries for garnish

Method:-
  1. Take Mangoes, wash them properly and cut in small piece.
  2. Blend Mangoes with milk and sugar.
  3. Sieve this puree and get the smooth puree.
  4. Check the shake consistency
  5. Now pour in serving glasses and add scoop of vanilla ice-cream over it.
  6. Sprinkle some dry fruits, green and red cherries and garnish with some piece of mangoes. 
Step by Step :- 


Take milk


Add chopped mangoes in milk and blend them properly


Now sieve the mango puree and it should be thicker. 


Now pour it in the glass

Add ice cream scoop and garnish it with dry fruits and cherries


Serve immediately 















Masala Papad




Masala Papad is a quick, easy, delicious and tasty starter. It is very crunchy and masaledar starter to be served with any meal. Some restaurants serve masala papad as appetizer, nobody refuses masala papad because it is very light and appetizing.  In some restaurant, they deep fried the papad, but we're gonna bake it in oven or microwave, this is a healthier version. You can use any type of papad (like urad dal papad, moong dal papad, kalimirch papad etc) There are so many ways to roast the papad, you can try any method as per your choice. I always prefer to bake it in oven or microwave. You could deep fry or shallow fry also. Baking is healthier version. Masala Papad is Roasted/Fried Papads are topped with onion, tomato and spices with the flavor of spices, lemon. You can change the variation with your choice. You could add some corn, cucumber also. I love masala papad with Khichadi, it’s a lovely combination.

Ingredients:-
Finely chopped Onion
Finely chopped Tomato
Salt- as per taste
Lemon juice- 1tsp
Schezwan Sauce- 1 tsp
Red chilli – ½ tsp

Method:-
  1. Take a bowl and add onion and tomato and add spice. 
  2. Add schezwan sauce for some different taste, its taste is so yummy and add some lemon juice and mix them well and keep aside.
  3. I have cut the papad in two parts and place in microwave for 1 min.
  4. Now place the papad on serving plate and add the toppings and spread across the roasted papad,
  5. Serve masala papad immediately.

 Step by step :-
Take masale and chopped onions and tomatoes.


 Mix all ingredients very well


Add some schezwan sauce and mix well


Take papad and cut in to two pieces and place it in microwave for 1 min. 


Take out the roasted papad from microwave.

Now place the roasted papad on a serving plate




Spread the onion and tomato mixture all over the roasted papad and serve immediately



Note-
Add the toppings to the papad just before you serve else they would get soggy.
You could either roast or fry papad.


You can add green chili if you like more spicy

Jackfruit Sabzi/Kathal Sabzi oil free (without fry)



Jackfruit Sabzi/Kathal Sabzi oil free (without fry)

Kathal is also known as Jackfruit. I like this vegetable very much, it is an Indian vegetable, it is also known as a desi non-veg for vegetarian people, lol, but there's a little bit of problem for cutting jackfruit, otherwise it is very easy to make. But nowadays this problem has also been overcome. In many supermarkets this is available in packs of peeled and chopped, ready to cook, There are so many ways of making, but now a days everyone is health conscious, that's why we are making this sabzi without frying, it is no less than frying. 
Let’s learn step by step this recipe on Frenziesta by Sonia Batra

Ingredients:-
Jackfruit - 250g
Oil - 1 tsp
Asafoetida - 1-2 pinch (Hing)
Cumin powder - ½ tsp
Turmeric powder – ½ tsp
Coriander Powder –½ tsp (Dhania)
Tomato – 3 (chopped)
Onion- 4 (cut in long size)
Green chili -1 - 2 (finely chopped)
Ginger-1 inch long piece (finely chopped/grated)
Red Chili – ½ tsp
Amchoor Powder – 1 tsp
Salt - according to taste
Garam Masala – ¼ tsp
Green Coriander - A Table Spoon (Finely Chopped)

  1. Method:-
  2. Take Jackfruit and cut into small pieces, and put it in steam pot. After steaming now put the same steamed pieces in fryer or over for grilling. Grilling till then golden colour. (Now its look like frying).
  3. Take pan and heat oil, put asafetida and cumin seeds in hot oil, after frying cumin, add chopped onion and fry for 3-4 min.
  4. Add ginger and chopped green chilies.
  5. Add chopped tomato and cook for 2-3 min.
  6. Add masala (turmeric powder, salt, amchur powder, cumin powder, red chili powder, coriander powder and garam masala) and mix them well cook for another 5 min till the tomato turn soft.
  7. Now add jackfruit, mix them well and cover with lid and cook for 7-8 min.  Now open the lid and see the pieces of jackfruit are soft. It didn't take too much time coz I have already boiled and fried the jackfruit pieces
  8. Your jackfruit vegetable is ready.
  9. Take out the jackfruit/Kathal in a bowl and decorate it with the green coriander on top. Serve hot with paranthas, chapati or naan.

Step by Steps:-


Take Jackfruit and cut into small pieces, and put it in steam pot


After boiling its look like this


Now put in fryer for frying without oil


Now take it out from fryer it looks like frying without fry. 


Heat oil in kadahi and add cumin seeds and Asafoetida


Add chopped onion 


when onion turns some brown colour, add ginger and chopped green chilies


Add chopped tomato 


Cook for 5-10 min till tomatoes become soft


Add Masale (salt, red chili, amchur, cumin powder, coraindar powder, Turmeric powder, garam masala)


Mix them well 


Now add jackfruits 


Mix them well and cook for 5-8 min.


Now Kathal is ready to be served.  



Note:- 
you can deep fry/shallow fry the jackfruit.
